Tuscan Kale: (US) is a member of the Brassica family along with broccoli, cauliflower, collards, Brussels sprouts and others. The variety known as Tuscan or Lancinato (aka black or dinosaur kale) is a powerhouse of nutrition. Tuscan kale is high in calcium, Vitamins C and K and high in carotenoids, especially lutein (important for eye health) and zeaxanthin. It also contains sulforaphane, a component rich in anti-cancer properties and indole-3-carbinol, another potent cancer-fighter. Many consider kale to be a superfood. Cavolo Nero (UK) is the same plant as Tuscan Kale.
