Fast Day All Day Easy Peasy Soup

we-heart-cabbageAs a super busy psychologist with no time during the day to cook, this fantastically versatile spin-off of the famous diet cabbage soup has saved me time and time again. It is so simple to make, the seasonings can be varied over and over again so that it is always new, and it is one of my favorite “Big Bang for Your Calorie Buck” treasures: Because I am a girl who needs some volume on my Fast Days (FDs).

I hope you enjoy it as much as I do! Keep the basic recipe the same, but add any other veggies or seasonings you like—just make sure to account for any variation in calorie count. I like to add a tablespoon or two of salsa con queso to the finished bowl of soup, and I make sure to add those 35-40 calories when I do!

Fast Day All Day Easy Peasy Soup

Ingredients

4 ounces chopped onion
1 bag broccoli slaw (about 12 ounces)
1 bag tri-colored coleslaw (about 12 ounces)
1 can fire roasted diced tomatoes
1 32 fluid ounce box mushroom broth--or chicken broth, or defatted bone broth
5 cups water
spices or hot sauce as desired

Instructions

    In a large soup pot, sauté onion in a little broth. When soft and translucent, add both bags of shredded slaw and a bit more broth and stir until coated. Add the can of tomatoes, water and seasonings. Simmer gently for about an hour, or until the veggies are soft. Correct seasonings.

Notes

Add your own spin to this soup. Go ahead, play with your food!

Serving Ideas Serve with a big glass of iced tea or a cup of hot tea.
